200 gr or 9 slices of EDAM CHEESE (or the type you like the most. You can also add grated cheese)
SALT and PEPPER to taste
2 tablespoons. EXTRA VIRGIN OLIVE OIL
A pinch of OREGANO
Instructions
First of all, you have to pre-cook the potatoes, as they need more cooking time. In my case, I'm going to do it in the microwave, because this way I save almost 10 minutes. To do this, I poke them a little with a pointed knife and cook them in the microwave for 6 minutes at 800w power. (If you don't have a microwave, you can peel and slice the potatoes into thin rounds, place them on the bottom of the baking dish, and place them in the oven at 200ºC for 10 or 15 minutes. After that time, you take them out and then you will continue baking them with the rest of the ingredients).
Once you have cooked the potatoes for 6 minutes in the microwave, take them out and cut them into slices of the thickness you prefer, while removing the skin. Place the potato slices evenly on the bottom of a baking dish or tray.
Now cut a zucchini also into slices, which you will have to wash well beforehand if you are going to leave the skin on, as is my case. Distribute the zucchini slices over the potatoes, forming a second layer. Add a little salt and pepper to taste.
Next, distribute the fillets of loin over the zucchini, forming a third layer. Cut an onion into julienne strips and distribute it over the fillets.
Wash and cut a tomato into slices and place them on the onion. Repack salt over the tomato layer.
Finally, cover everything with a final layer of cheese. In my case, I am using EDAM cheese in slices, but you can use any type of cheese you like, even grated cheese. Sprinkle a pinch of oregano on top.
Take the tray to the oven, which you will have preheated to 200ºC, and bake for about 30 or 35 minutes. The meat should not be too cooked so it will be more juicy.
After that time, remove the tray from the oven and you can serve it. Once served on the plate, sprinkle a little more oregano on top.
